Many of his former employees, who have gone on to cook at some of Montreal’s finest restaurants, say it’s clear Geiring wants them to succeed. According to McDonnell, Geiring gives newer chefs the freedom to learn every job on the line in the small restaurant and allows them take over the kitchen some evenings when it’s clear they’re ready. The team starts each shift with the same saying: “Let’s cook some food, have some fun and make some people happy.” For Geiring, people can tell when food comes from a good place. “I think you can taste in your dish if the food is coming from a happy kitchen,” he said.
